Lobster

In the film we see Alice (the extremely fine Molly Parker) ferrying plates of roasted lobster from the kitchen to the dining room. Lobster has to be served this way, or poached in butter, etc. in the restaurant setting. My recommendation is that you get yourself to Newfoundland between June and August and simply boil (some say it must be in seawater) a great load of fresh local ones in a big pot. The small town that Phonse and Dave drive through in the film is actually Petty Harbour, a ten minute drive from St. John's. Best lobster I ever ate came from a pen there. Replace your tablecloth with newspapers or better eat them out of doors and let the juices fly. Garlic butter for dipping is optional. A little "lie down" afterwards is recommended.
